"Flat strainer" or "Tebo"?

The advantage of using a flat strainer is that each noodle can swim in the boiling water, so there is less uneven boiling. It also makes it easier to drain the water neatly and arrange the noodle strands, resulting in a beautiful finished product.

On the other hand, the disadvantage of a flat colander is that it is very difficult to adjust the hardness and softness of the noodles when boiling noodles for multiple people at once. When boiling noodles for multiple people at once, it is also difficult to scoop out the same amount of noodles. If the person boiling the noodles does not have much experience with flat colanders, a certain level of skill is required to achieve the ideal hardness and softness and cook the noodles evenly, making it difficult to boil the noodles perfectly. For this reason, a flat colander may not be the ideal cooking utensil when cooking noodles for multiple people.

I think the Tebo exists to improve the shortcomings of the flat strainer. It is not necessary to spend a long time acquiring the skilled technique to boil and lift the noodles, and the fact that anyone can boil and lift the noodles relatively easily is very important in terms of business continuity and the stability of the skill level.

The drawback of the boiling machine, which requires each strand of noodles to swim in hot water, is addressed in two ways: by using a high-heat noodle boiling machine and by stirring the noodles with chopsticks.
