Seeing is believing, so the soup is our biggest focus.
The biggest focus of Taikaiken's Chinese noodles is the soup.
Ideally, it's best to experience it in person at the restaurant, but I'll write a little about it here.
A light yet rich soup with a deep flavor and umami taste.
For the first bite, loosen the noodles and enjoy the soup without adding anything. At first, you may not be able to taste it well due to the oil and heat, but the rich, flavorful soup will gradually become more pronounced and spread throughout your mouth.
Unlike soup that is simply hot and salty, the flavor is even more pronounced as it cools, allowing you to drink it all down.
We use a blend of several types of dried sardines to eliminate their odor without killing the flavor, and balance the flavor with the bonito flakes, vegetables, and pork bones. This means the dried sardines do not come to the forefront, and we think the flavor is acceptable to everyone. We have not reduced the amount of dried sardines since the restaurant first opened, and we have continued to experiment to find the best balance for this blend.
