Characteristics of Taikaiken's soup

Whenever I find delicious-looking dried sardine ramen online, I can't help but buy it, but the four or five types of frozen dried sardine soy sauce ramen I've tried so far have had a fishy smell that spread throughout the room when I heated the soup, and it was unpopular with my family.

However, Taikaiken's frozen soup is almost completely free of that unpleasant fishy smell, and is characterized by a pleasant aroma and deep flavor that strongly brings out the flavor of dried sardines.

This is because the generous amount of dried sardines are thoroughly heated to bring out the broth, and the flavor is balanced with vegetables, bonito flakes, and pork knuckles.

Since it is frozen soup, you can enjoy the same flavor as in the store at home.

Taikaiken is a small ramen shop that was started in 1976 by a husband and wife team in the small town of Moroyama, which has a population of around 30,000.

He learned the recipe from the Nagafuku-cho style Daishoken ramen restaurant and started serving ramen based on that recipe.

If I had continued to use the recipes I was taught, I don't think we would have become a ramen shop with so many customers coming in every day, which is unthinkable in a small town.

So why have we been able to continue for 47 years and attract so many customers? I think it's because we have always thought about "making it even more delicious," focusing especially on the soup, and have continued to pursue how we can provide a consistently high-quality, delicious soup.
